If their never going to be connected to the ePO server the just do a manual install of VSE in an unmanaged mode. I believe the defaults would be to get updates, over the web, from the McAfee servers.
There's no point managing them in ePO if they're never going to connect. You would just be left with the machines in the system tree permently out of date.
If they are going to be connected to the ePO server to begin with then just create a new system tree group apply a seperate policy defining the McAfee http repositories and then add the systems. Once they're disconnected and segregated they would retain that policy for updating.
Okay - I believe you are right. As I said though, all my installations have been through ePO - how would I get a hold of VSE to do the manual install?

Use your grant number to download it from here
There is a folder on your ePO that contains an installer but that doesn't include the agent so you would have to install that as well (Note: the one from the McAfee download site includes a unmanaged agent)
c:\Program Files\McAfee\ePolicy Orchestrator\DB\Software\Current\VIRUSCAN8800 on your ePO has the install files that are deployed from the repository.
P.S. If your running ePO 4.5 you can use the VSE package that you checked into the repository
