Create 1 task as a baseline with all of the common exclusions & then duplicate it 6 times, modifying each to add the additional exclusions you require.
Although ODS scan's ideally should exclude as little as possible in order to ensure complete protection. I always only exclude files suscepatable to corruption from my ODS scans.
Also if you're using VSE8.8 time the scan to run at the end of a business day before DAT update & configure the option to share the Scan Cache between ODS & On-Access scannning, that way you'll have a nice large cache of files that won't need scanning.
One way, but this would not be supported is to export the configuration from EPO, examine how the exceptions are structured, manually modify, then re-import...
But as I said - not supported.... I'd be quite happy to do it myself though!
