You should use a third party software where you can create scripts to pause, play or stop any program in your computer. Not sure if McAfee has such function.
No there is no way to do it using a script or command in the Home product.
To turn off real-time scanning/protection open SecurityCenter
Click Virus and Spyware Protection
Click Real-Time Scanning
Turn it off and tell it for how long.

Aren’t there any registry keys or some unprotected settings files which change the behavior of the McAfee VirusScan?
No there aren't I'm afraid. Are you sure it's the Home/Consumer product and not Enterprise?
Could you please let us know if you are referring to McAfee Home version or the Enterprise version .Kindly specify the name of the program, so as we may help you appropriately .

VirusScan Enterprise + AntiSpyware Enterprise 8.8
and in the taskmgr is see:
mctry and mcshield
