It's a perfectly good idea
The ePO server actually builds an agent install package that you can use: if you look in <epo install folder>\DB\Software\Current\EPOAGENT3000\Install\0409, you'll find an executable called framepkg.exe.
This is the agent installer - if you manually install this on the client machines, it will install the agent and configure it so that the clients talk to the ePO server that created it.
