Disable scanning network drives. This should allievate your performance issues.
In addition, since you didn't tell us the configuration of your VirusScan installation and just to make sure the resource/memory use is at a minimum, make sure you have the most recent Patch 6 installed, plus the 5300 scan engine, plus the recent Hotfix 427887.

We are not scanning network traffic, only read/write disk traffic.
But I will make sure we have the latest patches and hotfix.
