Endpoint Encryption for Removable Media - Is this possible ?

Looking in upgrading our licences to include endpoint encryption and also Endpoint Encryption for Removable Media. However just wanted to clarify how it worked, what we want is:
Users internally to share data on USB sticks seamlessly
They then pass this data ( Word / Excel files ) to a 3rd party in person or snail mail, who may not have admin rights or any additional software installed.
Can they open up the data ( with a password ) and edit the data ?
Looking around there is very little documentation about this, otherwise I would be very grateful for a manual ???

Ask your sales guy for a few trial licenses. They shouldn't even blink giving you 5 licenses, if it means they might sell 500+.
