I had a question regarding the changes required when upgrading and migrating ePO.
We've just upgraded an ePO server in our test environment here, from 5.3.2 to 5.9.1 paying attention to KB71825 and running the Pre-Installation Auditor tool which was useful.
The old ePO server has been shutdown now. It had an IP of 192.168.183.6 and hostname of EPOSRV532.
The new ePO server currently has an IP of 192.168.183.8 and a hostname of EPOSRV591.
What would be the easiest / safest way to change the identity of the new server to match that of the old, ignoring the fact that would be slightly confusing having a name with 532 in it, when the version is or will be 5.9.1 when the restore from snapshot is complete? What changes would we need to make in DNS (would rather not use a DNS alias if possible).

It was a simple case of renaming the old server (I just appended it with -old) and assigning a new IP address. Once this info had propagated throughout the DNS namespace, the old server was shutdown.
Since the old server has been shut down, I would suggest removing it from active directory, and before you restore epo to the new server, go ahead and rename the server and change the IP. It is much easier to have those changes done before restoring epo rather than after, as it affects certificates, etc. You shouldn't need to do anything to dns.
