In previous large enterprises I've seen different volumes broken out on the SQL server to optimize performance, I know the transaction logs, for example, had its own volume. I'm looking for information on this setup for future enterprise installs I might help out with. Can anyone help?

That would also be just an sql side configuration according to Microsoft best practices. ePO itself doesn't care where the files resides, as long as the db is accessible.
