I removed from all my clients VSE 8.8.0 and installed EndPoint Security 10.6.1.
May I stop to download and upgrade DAT files and Engine and upgrade only AMCore Content packages?

DAT will install only if it find VSE. The same applies to AMCore, it will install only if ENS is found.
If managed by ePO, you should see a Client Update task for daily content update. Just untick the DAT box.
If you don't even want the DAT in the master repository, usually there is a server task "Update master respository". Same thing untick the DAT box.
There is also Global Updating within Server settings, again if enabled untick the DAT box.

Engine install on VSE and ENS and it is the same on both.
You should keep that one.
If you are not going to use VSE anymore you can remove DAT and Buffer Overflow Protection (if present)
For ENS you should have enabled AMCore content and Exploit Prevention content..

That is so true, ENS for Linux and MAC still uses DAT
