We have our memory scans set to run daily at noon, but we have seen them run at different times of the day. Do they take that long? What would be causing them to run at different times of the day (user does not defer the scan). Do they start if the computer is idle?

Does C:\ProgramData\McAfee\DesktopProtection\OnDemandScanLog.txt confirm that the scans are indeed your Memory Scan? I have often seen users incorrectly report scans, and when reviewing McAfee's on-demand scan log it was something else altogether. Worth checking...

If the Memory Scan is running multiple times in a day then it seems there is a configuration issue.
Issue Eg; 1. you have scheduled scan to work at 12 pm which is applied on My organization.
2. another schedule to run scan at 2 pm which is applied on specific group within My Organisation.
This will run two tasks, one task will be running in entire my organization and other in specific group.
Also if you have applied policy based scan then it will run again.
Resolution: select the system where multiple task is running > click on actions > Agent > Edit task on single system > Verify what all tasks are showing and from there if there is any duplicate tasks then you can remove them or break the inheritance to stop running again.
The scanning system when idle is an option you can define within policy , I have attached image for reference.
