What can I do stop McAfee VirusScan Enterprise 8.8 Full Scan from being so intrusive on my work?
Disabling or rescheduling the the Full Scans is not possible due to IT policy.
McAfee scheduled virus scans (Full Scan) use 100% of my disk usage for over 4 hours (500GB of data/software/OS on laptop). McAfee freezes up any other software attempting to write/read to the hard-disk and makes my laptop unusable.
I have tried reducing the System Utilization to Low without any noticeable improvement. FYI: Recently, we were also required to run Bitdefender but McAfee caused the 100% disk usage problem before (then, I was not required scheduled Full Scans and I just disabled them).
I am considering disabling scanning inside archives but that would defeat the scan's purpose.

Double check/confirm with your ePO administrator that they have the proper AV exclusions in place:
Here's a good starting point for AV exclusions: McAfee Corporate KB - Consolidated list of Endpoint Security/VirusScan Enterprise exclusion articles KB66909
Also, take a look at McAfee Profiler ; should help in dialing in OAS/ODS scanning:
McAfee Profiler captures top processes and files that are accessed by the VirusScan Enterprise (VSE) On-Access Scanner (OAS). Based on the data collected, an administrator can choose files or processes to exclude from scanning to lessen the impact on the system.
An easy solution is to restart the computer at the start of the scan, it may be necessary to restart it twice, what happens is that your computer is not going to be scanned, the other is that you write to IT requesting that the OAS times down, we have them Of one hour only Tuesday a group and Wednesday the 2nd group. regards
