Is there a log on the Email Gateway that I can see the subject of a message? I'm willing to keep these logs for future reference and it must contain who sent and received and what was the subject of the message.

You will need to go to Queue Manager -> Configure Queues -> Superq -> Log level and change it to detailed.
You can enable SMTP conversation logging in "protocol configuration"--> "connection settings"

My MEG version is 6.7.2
If your appliamce version is 6.7.2, you can choose "detailed" in log level at "IntrusionDefender"-->"Mail Services"-->"SMTPI service".
