Defining virus scanner exclusions

Hi all,
I'm looking at applying some of the microsoft recommeded virus scan exclusions and have a few questions regarding applying them.

Can we define exclusions using windows variables in the path or do they need to be absolute paths? ie %SystemRoot%\... or C:\windows\

There are a few exchange exclusions set by the previous administrator such as exchlogs\*.log - how does it know where this is? is this the same as **\exchlogs\*.log?
