We're installing a new sever for an application and they sent us a list of AV exclusions to include. The folder exclusions are no problem, but for the file types they're asking for just about every common file type under the sun to be excluded from scans (txt, jpg, doc, mpg, pdf, csv, cfg) etc. We currently have all servers under a single server policy that we manage. Normally it's not a problem since they would usually just request extension specific to just the program that aren't commonly used file types.
If it's truly needed, would it be best to duplicate the current server policy and have these servers assigned to it?

You can Duplicate the policy and add exclusions accordingly.
