email being put into a new folder and marked as spam.

I don't know what has happened, but it looks like all my email is being sent to another folder (other an 'inbox') AND, is being marked as SPAM. How can I undo this?

You don't specifiy exactly which product you have but since this is a forun for McAfee Groupshield I will assume you have McAfee Groupshield for Exchange or McAfee Security for Microsoft Exchange.

Both these have the ability to Route Spam mail to the Outlook Junk E-Mail folder - is this what you mean??

If it is then it is possible you have configured GSE/MSME to "Route mails to User Junk Folder" in one or all of your spam score actions.

Open Interface - Policy Manager - Gateway  - Master Policy - Anti-Spam 

Check the Spam Score Thresholds - if scores are very low it can treat seemingly normal mail as spam (defaults are Hi=15, Med=10, Lo=5)  

In "Actions to take if spam is detected" check Low spam score action - if this is Route to User Junk Folder then as above the Lo scoring item will be routed to Junk-EMail folder instead of InBox.
