Trusted Updaters -Security Updates only

I am looking at McAfee Application Control.

My understanding is that trusted updaters automate hash updates to reflect software updates.

Is this correct? Are the updates simply security patches? I.e; An update to fix a piece of software that is vulnerable to a particular bug.

Or do they actually update the hash to reflect a new version of the product? An update to change the software version (I.E Word 2007 to Word 2015).

I want to enable automatic security patches to existing applications, without updating the application to the latest version. I.e update Internet Explorer 8 to reflect security patches, without upgrading to Internet Explorer 10.
